Do you find one is better than the other? Spotify premium quality at max settings should theoretically be “better”, but I’m not really sure if it correlates with fields potency. What do you think?
AFAIK, there’s no correlation.
Technically speaking, Spotify offers better sound quality than YouTube Music. For their free versions, YouTube Music’s maximum streaming quality is 128kbp, while Spotify’s is 160kbps (it maxes out at 128kbps if using the web player). For their premium tiers of both services, if playing Spotify Premium in a browser with the web player, you get 256kbps. Using Spotify’s apps, you get it’s peak at 320kbps. YouTube Music Premium is the same no matter where it’s played, ranging from 48kbps to its peak at 256kbps. Which one is better? On paper, Spotify. But unless you’re an audiophile (in which case you wouldn’t be considering either of these platforms), most people wouldn’t be able to tell the difference or wouldn’t care. Spotify wins on a technicality.

Also, if you want to download Spotify music without any audio quality loss, you can try AMusicSoft Spotify Music Converter. I have been using it to convert songs to MP3 format, and then listen to Spotify offline on my computer.
Youtube is 160kbps for opus in free version, which is good format. So on par with Spotify.
but will it change the conversion?
